Love these for a snack, or when I’m craving chocolate – a great alternative to junk food.
2 c raw almonds
2 c pitted Medjool dates (best for texture)
2 c old fashioned oats
4 Tbsp maple syrup
½ tsp salt
1 c dark chocolate chips
Add the the nuts and dates to a food processor. Pulse until they are coarsely ground.
Add the oats, salt and chocolate. Pulse a few times to begin to incorporate.
Run the food processor while streaming in the maple syrup until just ground and the mix comes together easily when pressed. Add more syrup if it’s too dry.
Press firmly into an 8×8 or 9×9 pan in an even layer. Make sure to pack it well so that it stays together. Refrigerate for at least 30 minutes.
Cut into bite-size pieces and store in the refrigerator.
