My husband and I in fact eat a lot of vegetables; here&#8217;s one of our favorites.\u00a0<a href=\"https:\/\/vivaciouschef.com\/wp-content\/uploads\/2011\/04\/IMG_2690.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-318 alignright\" title=\"IMG_2690\" src=\"https:\/\/vivaciouschef.com\/wp-content\/uploads\/2011\/04\/IMG_2690-225x300.jpg\" alt=\"Roasted Broccoli\" width=\"225\" height=\"300\" srcset=\"https:\/\/vivaciouschef.com\/wp-content\/uploads\/2011\/04\/IMG_2690-225x300.jpg 225w, https:\/\/vivaciouschef.com\/wp-content\/uploads\/2011\/04\/IMG_2690-768x1024.jpg 768w, https:\/\/vivaciouschef.com\/wp-content\/uploads\/2011\/04\/IMG_2690.jpg 1200w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/><\/a><\/p>\n<p><strong>Roasted Broccoli<\/strong><br \/>\n2\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Bunches Broccoli, cut into florets<br \/>\n1\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 shallot, medium, sliced<br \/>\n1 pint\u00a0 Cherry tomatoes<br \/>\n3\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 cloves garlic, minced<br \/>\n\u00bd t. \u00a0\u00a0\u00a0 red pepper flake<br \/>\n4 T.\u00a0\u00a0\u00a0\u00a0 EVOO<br \/>\nSalt and Pepper<br \/>\n1\/3 c. Parmesan Cheese<\/p>\n<p>Method:<br \/>\nPre-heat the oven to 450\u00ba.<\/p>\n<p>On a large sheet pan lined with foil, drizzle the olive oil over the broccoli and tomatoes, and toss together. Spread everything out in a single layer, and sprinkle over the garlic, sliced shallot, salt, pepper, and red pepper flakes. Roast the veggies until the stems are tender-crisp and lightly golden brown, about 18 minutes.<\/p>\n<p>Grate cheese over broccoli when you remove it from the oven, and serve.
