Eat this and feel proud &#8211; you&#8217;ll be satisfied, others will be impressed, and you will not have broken a sweat.<\/p>\n<p><a href=\"https:\/\/vivaciouschef.com\/wp-content\/uploads\/2011\/11\/IMG_3919.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-472\" title=\"IMG_3919\" src=\"https:\/\/vivaciouschef.com\/wp-content\/uploads\/2011\/11\/IMG_3919-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/vivaciouschef.com\/wp-content\/uploads\/2011\/11\/IMG_3919-300x225.jpg 300w, https:\/\/vivaciouschef.com\/wp-content\/uploads\/2011\/11\/IMG_3919-1024x768.jpg 1024w, https:\/\/vivaciouschef.com\/wp-content\/uploads\/2011\/11\/IMG_3919.jpg 1600w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p><strong>Butternut Squash Soup<\/strong><\/p>\n<p>2\u00bd lbs Butternut squash (one large or two small)<br \/>\n1 c. yellow onion, small dice<br \/>\n1 clove garlic, whole and peeled<br \/>\n3 Tbsp butter<br \/>\n1 Tbsp Extra Virgin Olive Oil<br \/>\n1\u00bd teaspoons fresh thyme, minced<br \/>\n2 teaspoons fresh sage, minced<br \/>\nSalt<br \/>\nPepper<br \/>\n2 Bay Leaves<br \/>\n4 c. chicken stock<\/p>\n<p>Preheat the oven to 375\u00ba. Prepare the squash by cutting it in half lengthwise and scooping out the seeds. Line a baking sheet with a rim with foil, and lightly oil it. Place the squash cut-side down and pierce the skin all over with a fork. Roast for 45 minutes, or until fork tender. Remove from the oven, and when cool enough to handle, peel the skin off the squash with your hands. Discard the skin.<\/p>\n<p>In a large heavy-bottomed pot over medium-low heat, add the butter, olive oil, garlic clove, onion, sage, thyme, salt and pepper. Allow onions to sweat and sweeten for about 10 minutes. Discard the garlic clove.<\/p>\n<p>If you have an emersion blender, add the squash and stock to the very soft onions. Blend until smooth.<\/p>\n<p>If you have a blender, add the squash and stock to a blender and blend until smooth. Add the squash to the soft onions.<\/p>\n<p>Add the bay leaves and adjust the salt and pepper to taste.
