I love to grab a Greek yogurt when I can, but most mornings I don&#8217;t even have time for that. Enter these muffins benefiting from protien from the pecans, fiber and sweetness from the dates and apples, fiber and omega-3 fats from the flaxmeal, and on and on. These muffins will get you through the morning at full capacity.<\/p>\n<p style=\"text-align: justify;\"><strong>Morning Glory Muffins<a href=\"https:\/\/vivaciouschef.com\/wp-content\/uploads\/2012\/06\/IMG_4415.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-546\" title=\"IMG_4415\" src=\"https:\/\/vivaciouschef.com\/wp-content\/uploads\/2012\/06\/IMG_4415-225x300.jpg\" alt=\"\" width=\"225\" height=\"300\" srcset=\"https:\/\/vivaciouschef.com\/wp-content\/uploads\/2012\/06\/IMG_4415-225x300.jpg 225w, https:\/\/vivaciouschef.com\/wp-content\/uploads\/2012\/06\/IMG_4415-768x1024.jpg 768w, https:\/\/vivaciouschef.com\/wp-content\/uploads\/2012\/06\/IMG_4415.jpg 1200w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/><\/a><\/strong><\/p>\n<p>1 \u00bd c unbleached white flour<br \/>\n\u00be c flaxseed meal<br \/>\n\u00be c old fashioned oats<br \/>\n1 c brown sugar<br \/>\n2 tsp baking soda<br \/>\n1 tsp baking powder<br \/>\n\u00bd tsp salt<br \/>\n2 tsp cinnamon<br \/>\n\u00bd c dates, chopped small*<br \/>\n1 c pecans, toasted and chopped roughly<br \/>\n1\u00bd c shredded carrots (about 5 medium)<br \/>\n1\u00bd c shredded peeled apples (about 3 small)<br \/>\n\u00bd\u00a0c milk<br \/>\n2 eggs, beaten<br \/>\n1 tsp vanilla<\/p>\n<p>Preheat the oven to 350\u00ba.<\/p>\n<p>In a large bowl combine the dry ingredients: flour, flaxseed meal, oats, brown sugar, baking soda, baking power, salt, cinnamon, pecans, and dates. In a medium bowl, whisk the eggs, milk, and vanilla; then add the apples and carrots. Add the wet ingredients into the dry, and fold until just combined \u2013 do not over mix.<\/p>\n<p>Lightly grease a muffin pan, and fill to the top. Sprinkle oats and pecans on top for looks and crunch. If using a medium\/standard size muffin pan, bake for 20-25 minutes, or until a tester comes out clean. If using a small size muffin pan, bake for 15-20 minutes.
