1 stick butter
1/2 c milk
3 Tbsp (heaping) cocoa powder
1 c sugar in the raw
1 c creamy peanut butter
1 tsp vanilla extract
1/4 tsp salt
3 oz dark chocolate chips
3 c old fashioned oats (quick-cooking)
1 stick of butter in a medium saucepan set over medium heat. Melt the butter and add ½ cup whole milk, 3 heaping tablespoons of cocoa powder, and 1 cup of unrefined sugar. Increase heat, stir, bring to a boil, then boil continuously for 1 minute, stirring the entire time.
Remove from the heat and add 1 cup creamy (NOT chunky) peanut butter, 1 teaspoon vanilla extract, and ¼ teaspoon of salt. Add in a couple of ounces of dark chocolate. Stir well, then finally add 3 cups quick-cooking oats and stir to combine completely.
Drop on sheet pan to cool. Store in fridge.
Peanut Butter Variation
Omit:
Cocoa powder
Substitute:
4 oz white chocolate chips (for the choco chips)
1.5 c creamy peanut butter
½ tsp salt
